- 1-2 frozen chicken breasts
- 1 can diced tomatoes
- 1 can tomato sauce
- 1 teaspoon of garlic
- 1 teaspoon of chilli powder
- 1/4 teaspoon of cumin
- Salt and pepper to taste
- 1 can of black beans (optional)
- 6 bell peppers (various colors are peferred but not required)
Cut bell peppers into bite-size pieces
Place frozen chicken in the bottom of your Insta-pot and add all ingredients in order. Set Insta-Pot on Chill setting for 20 minutes.
Once cooked cut chicken into bite-size pieces and mix back into pot to stir.
Serve or place in containers for your meal prep lunches.
